I would imagine 100% Pilsner malt, 100% Saaz hops as it says brewed in the pilsner style, you will need to step or decoction mash, or (cheat and get some pilsner enzyme) and brew with a decent lager yeast (u should have that bit sussed ;) )


most modern pilsner malts only need a simple decoction therefore:

Using the following schedule:

Strike in to mash temp. of 56 deg C Wait 5 minutes. take a decoction. Heat to 69, rest for 10 min. Heat to boiling. Boil for 5 min. Return decoction to mash for rest at 69 for 20 min.

Then you can decoct up again to a mash-out temp of 76 deg and then sparge at 82 as per usual.

Something like for 23 Ltrs
4.6KG Pilsner malt

100 Saaz 60 Mins
23g Saaz 10 mins

Pitch at 13 and ferment no higher than 15.5 deg

and lager in secondary in a fridge for 6-8weeks

It will be a good drink if done right.

Run it off into a pan heat on hob then add back to the mash, or run off from tun to boiler, and control the electric boiler with PT100 probe and a PID controller, Simples.

Failing that if you have a herms you can step mash, but it wont quite give the result of a decoction.
