Hello all,

I'm looking for a ginger beer recipe that turns out similar to Stones ginger wine.I've tried a kit that was gingery and sweet but the other home ones I've tried haven't turned out ( so far ) as i hoped.
I like ginger wine on its own but also in whisky for whisky macs.
Can anyone help?
 
I accidentally brewed a pretty decent ginger wine using the River Cottage ginger beer recipe.

Instead of using 2L plastic bottles and releasing pressure daily I decided to be lazy and use a DJ. Only I forgot about it for a couple of weeks and it had fermented out. Think it was about 12-13% in the end and dry as hell!

This was my first attempt at a country wine but turned out quite decent. It tasted a bit thin when I had a slurp during bottling but dramatically improved after aging for about six months - even better after 12.

Recipe is for 10 litres (12 bottles plus a few tasters along the way)

1kg ginger, peeled, chopped and roughly minced
1.5 kg white sugar
0.5 kg soft brown sugar
200 g raisins
200 g dark sultanas
Juice and rind of 2 lemons
Juice and rind of 2 limes
Juice and rind of 1 orange
3 hot citrusy chillies

Boil in 5 litres water for 15 mins
Top up to 10 litres with cold water
2 TSP Pectolase
2 TSP yeast nutrient
Gervin GV4 yeast

Stir daily

After 7 days strain mixture onto another 1 kg of sugar

Leave to ferment out

Rack when required (I prefer to start off in plastic FVs then bulk age in DJs)

Came out at about 14.5% so sugar can be adjusted if that's a bit much.
The chillies add a bit of extra heat without making the ginger taste too cloying (IMHO).
