Any ideas on this stout recipe i've put together??

For 1 gallon:

marris otter 1kg
crystal malt 25g
black malt 50g
chocolate malt 25g
rolled oats 100g

The addition of chocolate malt to add a slight chocolate flavour, I don't have any roasted barley hence the black malt and the crystal malt to add a bit of body. I've only done one all grain brew so far so this is real learning curve.
Based on one of the calculations in the graham wheeler real ale book I worked out for a bitterness (EBU) of 45 similar to guiness,
and aiming for an OG of 1045 to 1048 I would have to use 8.5g to 8.7g of challenger hops, they have an AA of 9.3%

mash @ 68 for 90 mins
boil for 90 mins and add 8-9g of challenger @ 90 mins

would use safale-04

(I may even double this recipe to save on yeast)

Any thoughts on this please??
 
Looks good. I've done stouts with US-05, S04 twice and Nottingham. The S04 was my least favourite. The other two yeasts made better stouts than the two with SO4, which were both good, but the others were better. I don't like the S04 flavour I think. I reckon Mauribrew Ale yeast would be good in a stout too. Very clean, more flavour than 05 and Nottingham, nicer flavour than S04, for my taste.
 
thanks for the reply, I hope to have a go on Thursday. I have got some gervin ale yeast as well the kind of stuff you get from wilko any good for this kind of beer?? :hmm:
 
I have done stout, imperial stout and a braggot which was over 11%, all fermeted with wilko gervin ale yeast. They all came out fine.
I also used Danstar Nottingham a few times and had no problems with it.
You should be fine with wilko's - rumour has it gervin is notty in a different dress anyway.

should I be worried?? I did this recipe yesterday for 2 gallons plus added a tin of black treacle got an og of 1064. pitched the yeast last night but hasn't started yet. do you think I've screwed it up? shall I wait a bit longer, was wilko gervin ale yeast that I used (bought it last year didn't think it was that old) I thought about added another packet of yeast to it.
any ideas??
 
Are you doing a glucan rest with the oats? And are you toasting them?

I am a big fan of oatmeal stouts but I do think you need some flaked Barley as well 50/50 mix IMHO, the oats can become too much.
 
do you think I should toast them first? doh!! I didn't. what effect will it have??

decided to go for it a add another packet of yeast, its started bubbling now which is good albeit rather slowly. hopefully will be alright.
