Just putting on an earl grey IPA extract brew- 12-13 litres as follows;

1.0kg dme
55g wheat dme
10g crystal malt
2 dessert spoons golden syrup

7 earl grey tea bags steeped in 2 litres water to be added after boil

Approx 20grams of old recycled hops used to dry hop (random mix of EKG and cascade) 60mins
10g target 60mins
15g cascade 30 mins
15g cascade 15 mins
10g cascade 2 mins

Gervin ale yeast

Should come out around 55IBU ish

I like tea and I like beer but I don't like them mixed together. You would be better off getting some Bergomot oil from a health shop and use that instead of tea bags.

Quick update, i have had this over christmas ( still got a couple of bottles left) one of my best beers yet and loved by the pale ale fans. i may up the tea bags by 1 or 2 next time or try the bergamot oil as is not overly early greyish. came out about 4% and body seemed just right.

Cheers

I like the sound of it. I'm a big fan of using Cascade as you did for flavour/aroma. I have been using Northern Brewer for bittering which, like Target, is high in AAs at 9%.

Do you get any wheat beer style cloudiness from the wheat DME?
