amarettale help

I had a great idea for an Xmas beer with amaretto. Found some essence from a bakery store which arrived this morning.

Turns out it is essential oil and hence I am concerned about solubility and head retention.

I guess ill just have to experiment but can anyone give me any tips?

My scottish heavy has subtle Amaretto undertones due to the yeast WLP-0028 here.

Hi at a rough guess it should have good solubility in alchohol like most oils,but try to avoid using to much as it could be overpowering. After all it's the pure oil from the nut, and not watered down (they make ammaretto by soaking ammaretto biscuits in the alchohol)!!
So you could make biscuits first and then soak them for authenticity!! (if like me you didn't eat them first)!!

Using pure oil would also affect the head you might get on the beer.
