Hi Folks

I bottled my Coopers Brewmaster Irish Stout on Friday 12th April, so its only been 2 days ish. I used Coopers carbonation drops in 30 bottles, and 1 Bakers teaspoon of dark demara sugar. I check my (plastic PET) bottles to make sure they are hardening up as they carbonate. I have to confess that when I checked them today about 6 of the demara primed bottles were nice and hard (worryingly so after only 2 days), and so I tasted one. Awesome head,bubbles a bit big for a stout, but tastes amazing none the less, needs a bit of maturing - so I cant wait till about 6 weeks time when they will be lovely.

My question is:
Should I worry about the 6ish hard ones, or should I move them to the cold?

Any advice would be appreciated as I would hate to loose a drop through having bangers.

those coopers pet bottles dont explode- ever -when they deform to the point they look like champagne bottles then u can worry (happened to one of mine-v odd-, release the pressure in bursts over a day or 3 and ur good to go)

Awesome, thanks wilsoa1111, I will carry on keeping an eye on them over the next few days.

My next question is: (I feel like the amateur I am asking all these questions)

Would the Demara sugar be beneficial to the taste???

yeah, in most its better, maybe not a lager but everything else defo- nice malty taste- think scottish 80 kinda deal

I have a Coopers Irish Stout to put on soon and can't decide what to add to it! I had a Coopers dark liquid malt but made a mistake and used it in my last brew so need to buy something else! I can't decide whether to do it as the tin says, just go get another dark malt extract, or do the English Stout recipe from the Coopers web site http://www.coopers.com.au/the-brewers-guild/how-to-brew/stout/english-stout.

I like the idea of something like a Murphy's type favour profile.

How did you do it and have you any thoughts?

I followed the recipe on the tin, I did add a bit more brewing sugar to raise the OG. I am still pretty new to this so don't take my word as gospel. The dark dme has added loads to the brew, one thing though. I would avoid using coopers carbonation drops - this is the second brew iv used them and just really disappointed.

Did you say you added i carbonation drop and 1 tsp of demerara sugar or am I miss reading it :hmm: :hmm:

I hope so, as if that is in 500ml bottles then they are going to be way to over carbonated. They probably won't expolde but you would have fun opening them.

I am afraid you read it wrong, some of the bottles I added the carbonation drops, I then ran out of carbonation drops so I had to resort to using the demara sugar as a substitute.

I am thankful that I did run out though, by adding the demara sugar I not only got amazing carbonation but also a great tasting stout.
 
Ah I am glad you did this because you will be able to tell us whether there is any difference between the ones primed with the carb drops and the demerara ones.

Generally the feeling is that the amount of priming sugar is so small that it won't make any difference.

I was going to do a test by priming some bottles with plain sugar and some with demerara but never got round to it.

Within the first week in the warm the bottles with the demara sugar are already hard, hence my initial concern. The difference is so pronounced already. I will have to do a taste test in a couple weeks to assess drops v demara.

I have concluded that I'm not using drops again!!!

I used one carb drop per 500ml bottle in a Coopers Real ale and i'm pretty impressed. It's not too fizzy and has a head that stays.

As an experiment for lager, I used 2 drops in some 500ml bottles 1 teaspoon of granulated sugar in others. That was only on 9th April, so still got some time before I open these. I will probably post the results on here.

I found this video interesting for knowing what to expect from carbonation and how long it takes.
 
There was a fella on here recently who tried 5 or 6 different sugars for carbonation. Not entirely scientific but interesting all the same.

I think what I will do in my next brew is try and repeat the experiment. With different colours of sugar: white and moving to darker ones. I'm going to go extract next, I wonder if your brewing style makes a difference ie kit v extract v AG?? I will just have to see as I progress.
