I just broke my arm so all grain is out for a month or two but I have to brew for the other half's birthday. I luckily got a nice big IPA on the day before I broke my arm...how I am gonna keg it is another matter!
So I ordered l light DME and wheat DME in an attempt to get a boil going and not have to lift anything too heavy. I have never used DME apart from making a starter. She wants a wit after our trip to Belgium where we had a nice peach wit one evening. She doesn't like beer so I was hoping this might be a breakthrough moment!
I plan to use
2k wheat DME
1.5 light DME
Goldings to about 15IBU
orange zest30gish
Corriander Seed roughly 15g
wyeast belgian abbey 1214 (shop didn't have the wit)
Then I am going to add peach purée or extract to the keg so the beer will be slightly sweet (something the non beer geek ladies will enjoy)
So how am I looking?
Should I give the peach some time in secondary or is straight to keg ok? Maybe up the IBU's to take away some sweetness?
