Been reading through a few posts. I'm looking to make a sourz type shot. The 23% sounds good if I can get anywhere near it. Is it possible? I read that you don't add all the sugar at once although on the instructions, that's what it tells you to do. In the pack come carbon filter, will you need more than the packet? Also, I've never made a high brew before, max is 13% wine, is there anything I need to know about high % brews. Any help is much appreciated.

Add all the sugar at once. Make up to about 23 litres ( or whatever it says on packet ), leave it at the right temerature to ferment for 10 days ( or longer if not finished ). Then ideally you should triple filter it through activated carbon granules in a tube to get it clean and almost odour free. Then you can flavour with whatever you like.
