Ive been reading about brewdogs 4 year old whisky barrelled porter and I was just wondering how I could age porter without the whisky barrels? Im was told you can add oak chips but I was just wondering how I would store a batch? I have some 6 gallon glass demijons as storing in glass maybe better than plastic right? Do I just seal it and put it away and that's that? What else can I use to add depth? Is it recommended to soak the chips in port or whisky before? Any tips on ageing porter much appreciated!

You need to soak the oak chips in whatever you want for a few weeks prior to adding them to the beer - they literally drink it up. I always liked the idea of southern comfort.

Whatever you store in, make sure there isn't much headroom, it can ruin your beer. You basically just chuck them in, seal it up and give it a few weeks.
 
Thanks for this.. I was actually thinking of storing for a year? I managed to find some chips so Ill get soaking! Do I use an airlock as I'm sure there would be a slow release of CO2? Ill also make sure its topped up thanks ;)
