Today I did this!

Aleman's Effin Erdinger

My recpie was slightly different due to my set up and my old school scales!

2900g Wheat
2500g Lager Malt

90Min Tettnang 15g
90Min Perle 15g
45Min Tettnang 10g
15Min Tettnang 10g

WB-06

Still 45 mins to go on the boil and a good looking wort!

Will report back with gavs etc.

Well done Darcey. You will love it, wheat beers are excellent for homebrewing as they are perfect for drinking young. :cheers:
 
I have heard about them being drunk young. I am going to keg half and bottle half. The plan is to do afew brews for xmas over the next two months so i need something to keep me off those! If this goes well i'll do another one for sept/oct drinking.. so when Dec comes i'll have lots of lovely mature ales to sup on!

I am reasonably happy with the out come, I will prob do another one next summer as its deff a summer BBQ beer. I did have quite a poor yeast actuation ended up with it at 1.020 and no further would it go. I think I prob pitched too warm.

Drinkable (if you like Wheat beers). Deff 100% better than any of the kit wheat beers I have done. Worth the effort!
 
well done matey. Looks great. You can't go wrong with wlp300 for german wheat beers, or re-culture from a commercial bottle of Schneider weisse.
 
I think I'll go down the liquid route next time, or as you say culture some. If I had got abit more out of the yeast i think it would be dangerously drinkable, at the moment its alittle sweet. I am going to leave it in the keg for a day or two to fully carb up to 2.5 CO2.
 
Looks quite similar to the wheat beer I made a couple of weeks ago. The WB-06 is a nice fast yeast but I found that it can be quite overpowering in terms of flavour.
 
I have done afew kit beers with WB-06 and the yeast flavour is very similar in them. I would like to try a different yeast for the next one. I remember someone writing that the yeast can be up to 60% of the flavour, since then I have treated my yeasties with extra respect.
 
My previous wheat beer was made with Safeale S-05 after I accidentally threw the WB-06 in the bin: it turned out superbly, although didn't have that distinctive fruit flavour that is associated with wheat beer yeasts.

I personally think it contibutes more to the flavour charachteristics than 60%.

Looks a nice glass that though Darcey, though I'm not a fan of wheat beer myself :)
 
Ah nice and simple recipe!

Any idea whether it would be ok to use MO instead of lager malt? I seem to have a lot of wheat malt lying around...
What temp did you ferment at?

I fermented at 12-16C over a week. Was trying to boost the temp up towards the end more towards 18C to get some more banana flavours will try harder next time.

I think any pale malt will do the job.
 
Hmm, :hmm: My flat is still a bit too warm for that, at about 22C.

I've got a saison fermenting away at the moment, as saison yeast likes it hot. I might brew a wheat-saison hybrid and pitch onto the yeast cake!


Thats a nice head you've got there, does it last? I tend to find my head collapses rather quickly... :shock:
