Here we go :

Following on from this thread : viewtopic.php?f=21&t=34784

The recipe I ended up with.....yes...."ended up with".....the recipe was unknown until I rolled the dice! LOL!

9kg Crisp Pale
900g Biscuit
900g Crystal rye
510g Carabelge
666g Caramalt
650g Caragold

Mashed for 90 mins at 65c

Boil was 69 mins and hop schedule was :

FWH 25g Kohatu
69 mins = 25g Cascade & 25g Kohatu
21 mins = 25g Apollo & 25g Cascade

Then the dice decided that I would do this :

9 mins = 25g Apollo & 25g Bobek
8 mins = 25g Apollo & 25g Kohatu
7 mins = 25g Bobek
6 mins = 25g Cascade
5 mins = 25g Bobek
4 mins = 25g Kohatu
2 mins = 25g Cascade
1 mins = 25g Apollo
0 mins = 25g Bobek

I added protofloc at 15 mins and 2 Wyeast yeast nutrient tabs at 10 mins.

Ended up with 40 litres at 1060. Lovely clear wort and pitched a MONSTER amount of San Diego super yeast.

can you post a link for the video? i subscribe to them on youtube but not sure what video it is cheers.

forgot to mention Kev The Jags are in Kirkcaldy next Saturday, will give you a shout later in the week to see if you'll be about, if you fancy a few Jagpur's. Calum and Andy seem to still be alive so I think it's safe to drink :lol:

Just a wee "posting from my phone" mishap

Really keen to see how this yeast performs actually. Heard good things about it. Should be finished fermenting by weekend if what I read is correct.

This yeast (San Diego Super) is unbelievable. Skimmed the krausen last night as I intend to top-crop it and by the time I'd done the 2nd fermenter, the 1st was frothing like a good 'un again!

I reckon the bulk of fermentation will be done by the weekend. The wort is practically boiling its such a vigorous ferment.

Definitely going to keep the yeast from this batch. It's good stuff.

Both fermenters down to 1013 so time to move off the yeast (for harvesting) and to add the dry hops. 50g of Kohatu hops going into each fermenter. Nice

Wee update on this. Added 100g of Kohatu dry hops to secondary. The brew ended at 1012 giving a nice 6.2% IPA.

Here's the first 20 litres coming off the hops and into glass with the gelatine before going into a keg tomorrow. The other 20 litres will then go through the same process leaving me with a spare fermenter for my belgian ale that's getting brewed tomorrow! :evil:

It lives!

Tastes very nice. It's very very young but tastes superb. I reckon it won't be long before it's awesome as it's almost there.
