So just finished my Fuller's discovery clone. I hadn't paid much attention to water treatment up till now but my last couple of brews weren't quite right. I've been having problems with cloudy wort and the beer was finishing with a higher final gravity than expected. I tried mashing at lower temp and using 2 different thermometers to make sure. It made no difference.
Finally got round to visiting the local council here and getting a copy of the water quality report .After a few translation issues and different ways they measure things out here! I managed to plug it all into the Bru'n water calculator. The water here is ph 7.7 and quite soft. The Bru'n calculator said not enough calcium for yeast health. It was under 40 ppm. I've made a small calcium chloride and a calcium sulphate addition.Also added acid malt to lower mash ph.
Fingers crossed this solves a few of my problems. Big thanks to Martin Brungard. Bru'n water fantastic! :thumb:
 
Hope it goes well , i have had similar problems and have started using brun water and first few brews have good results , p.s used acid malt too on the last batch and that is the better beer . :thumb:
 
It's escaping out of the airlock this morning. Probably the best fermentation I've had so far. Water treatment works :cheers:
