Advice needed! Looking to brew a good bitter in Canada!

Hello all!

This is my first post here, so please be gentle, and forgive any unintentional impoliteness :-)

I've recently moved to Canada (Vancouver) from the UK, and it seems that the Canadians have an interesting take on beer, or what they call wheat beer. Having not found anything that makes me happy I thought I may have a go at making my own. I've made kits in the past, but I'm guessing that I'll not be able to find a suitable kit here for a good bitter.

Having never attempted anything more advanced than what comes out of a tin, I thought I'd see if any of the more experienced members here could take a look at what's available over here raw material wise and recommend a recipe for me? The best retailer in Vancouver seems to be this guy: http://pages.pacificcoast.net/~dansmall/beer2.html

I guess I'm looking or something like a Youngs special/ordenary, or Flowers IPA, but anything that resembles a decent bitter would do :-).

I have discovered that because of the US subsidy on corn production, the majority of brewers use corn sugar, or HFCS (high fructose corn syrup). I guess I could use that, or I could get my hands on cane sugar.


Any advice or pointers would be hugely appreciated, thanks for taking the time to read this :-)

Welcome to the Forum.
Had a quick look at your URL, it seems quite comprehensive if a tad biased.
Perhaps your best bet is to try the "Prarie Malt" along with crystal malt and Goldings hops.
I think it's going to be a case of "suck it and see"!
