Hi all

Im new to home brewing, having brewed a successful batch of woodford wherry a few months ago i thought i would try something i prefer more. A belgium abbey beer, brewferms kits. I have fermented in fv for 7 days and instructions now say to secondary ferment in another fv with 90g extra candy sugar and then transfer to bottles. I was wondering how long it shoud stay in secondary fv with the extra 90g of candy sugar added before bottling, and if i need to add even more sugar when i transfer to bottles and how do i do it with hard candy sugar ( will it dissolve in bottles?)

detailed responsed would be graitfully appreciated as im not to clued up on all the brewery jargon yet

hi and welcome , the reason you are moving it to another FV is so you can batch prime it for your bottles/keg which you put into bottles straight away , however what you should be doing is boiling your candy rocks in some water for around 10 mins to dissolve them and sterilize then allowing it to be cooled to room temp (pop cooking pan into a sink of water to speed this up , prob take 30 mins) Once dissolved candy sugar and water is cooled put into new FV first then add your brew onto of it (syphon ) avoid bubbles both now and when bottling , by popping syphon tube onto bottom of vessel and when bottling hold syphon on the side so brew slides down reducing amount of bubbles (a little bottle buddy is ideal if you have 1 ) Then leave bottles in warmth for 10 to 14 days before moving to a cool place for at least 4 weeks (try a sample each week to notice the difference) the longer you leave it the better your beer will taste and the higher the original gravity the longer time is needed , hope this helps :thumb:

My brew is it the secondary fv at the moment with 90g hard candy sugar. If i clean and steralise my bottles on tuesday then add extra 80g liquid candy sugar with method previously stated then draw off into bottles would this be ok?

How much sugar should i reduce by to take into account how much hard candy sugar will have dissolved into my batch in secondary fv, does 10g sound about right (80g instead of 90g) as it will have been sitting for 3 days with 90g in it?

it will just be converted to alcohol (not much though) just leave it till its got a constant hydrometer reading then add candy as said 90g then transfer , now what happens is the yeast will convert the sugar (candy) into alcohol (the warm storage time) and a by product will be c02 gas now this will be trapped in your bottles, so after around 2 weeks this will be done and by storing in a cool place it will stop the yeast working and will condition the beer and at the same time the c02 will be absorbed into your brew giving you a nice fizzy beer :cheers:
