Hi,

I have a Wherry kit on the go but am having to go away with work next week. It was started on the 10th and I'll be back on the 24th - it will be OK left this long won't it? If not, is there anything I can do before I go on the 16th?

yes two weeks is the perfect time to leave the brew to ferment out. Perhaps you might want to syphon it into a 2nd fv before you go, to get it off a lot of the debris but if not the beer will still benefit from the wait.

I've made the wherry kit twice now, the first time it got two weeks and two days in the FV, then a month in the barrel before tasting, it was 'rough' and had to be left for another few weeks before being a damned good pint.

The second kit got over three weeks in the FV (I had to go away for work) and was then left for 6 weeks before tasting and was absolutely superb, to me it seems wherry really benefits from patience at all stages. When I posted about the first attempt I got very similar feedbacck from other folk on here who had previously had similar experiences.

So, don't worry about it being in the FV for a while, or the bottle :D
