He doesn't cover how he strains the hops. I just strap a second piece of voile over the FV just as he did with the mash bag. It works a treat but you need to use irish moss to clear things up. I do get a certain amount of material floating on top of the fermented wort. I find a gentle stir gets most of it to sink then syphoning into bottles or barrel leaves the rest still on top, so it's no problem.
