Hello all.

After some US-05 for a commercial brew for a local bar. Used it home brew and I rather like it. Should be interesting to see how it works on a 800-900l kit! I am looking for any 500g packs of the stuff. Quick google shows lots of out of stocks from my usual go to's.

If anyone spots it in stock can they send me a quick pm?

We use a really floculent yeast as a house yeast. Hopefully any additional clearing time (Don't use finings) will be saved by the speed of fermentation. Again this is an unknown on a commercial scale.

I think they have it at Murphys...be careful with it though. I lost nearly a full brew as the bugger would not stop fermenting in the cask....Steel City Brewers are having a similar problem...beer showers all round??

Farams dont stock it. Waiting until we need a large murphys order to soak up the exorbitant pallet charges.

Not so much a problem at the moment with the brewery ambient temperature. I have suggested a 100% keg brew for this one. A little worried about the attenuation for the cask. We shall see!

Seriously....I brewed 700 litres of a single hopped Citra with it..started at 1040....after 5 days it had dropped to 1011...so chiller went on at 6 degrees....I left it for 4 days before shoving it in the cask. The faucing test said that it would drop to 1009 so giving me a couple of points to give it a bit of condition...it was murky going into the cask but I thought this would be cleaned up easily with finings...
Anyway it was kept in the coldroom at 10 degrees. The first cask was tapped after a fortnight and the jet of beer hit the ceiling. It was super cloudy, was left to vent for 3 days and just wouldn't stop gushing. It tasted fine but was just to lively for words.
the only way I could sell it was to kill it in the brewery and sell it as a bright beer to be used immediately. I lost 5-6 casks where it had blown the shives clean out...one was in a pub cellar. When I checked the gravity on a cask it was down to 1006!!!

Steel City used to use US05
 
I have problems with it in homebrew..I really struggle to get it to clear within a reasonable timescale...to my mind its the devils yeast...
I want to try BRY 97...I have heard that this is a lot better
