Evening all I'm after some advice if possible. :wha:

Having followed the instructions to a 1gallon wine recipe to a tee and adding them all to the fermentation bucket for the initial fermentation, I always find that I have excess must left over after filling the demi john. It seems a waste to throw it away as it could be used to top up the demijohns as the sediment settles further down the line.

What do you guys do? Do you keep it and ferment it off in a smaller container or do you just throw it away?

You don't really need to do your fermentation in a bucket if its only for a single gallon at a time, just mix it up a bit short in a DJ to leave some headspace, then rack after fermentation to a 2nd DJ and top up with water this should give you 6 bottles worth every time.
