The plan was ....
2.2kg maris otter
65g crystal rye
65g caramalt
14l of water in 18l pot 68°C
65°C target temp .
Water treated with 1 crushed campden tablet
(Was aiming for 12L for the boil and 10L left to ferment )
15g target @60 mins
Half protofloc tablet @ 15 mins
16g amerillo @10 mins
25g citra @ flame out .
10g of mangrove jacks m44 yeast
25g citra dry hop .
Here goes my 1st brew day ...
Couldn't fit all my grain in my pot with the 14L of water , had to take out 1L of water ! Got it all in at 68°C and it dropped to 66°C after I had a good stir and got all the big clumps broken up . Put lid on and wrapped it up in a blanket ( started timer 30 mins ) give it a stir and check temp , was 64 °C . Lifted bag off the bottom and put heat on again now at 66°C drop bag and cover again .
My 60 mins is up ( managed put some washing on and Hoover) have a smoke )
Lifted bag placed onto colander and give it a squeeze , only left me with 11L for my boil .
I know I'll put kettle on , with digital thermometer in kettle I ( sprarge ) into another smaller brew kettle / pot with 1L # 80°C ,
Great I've got my 12L .
My boil goes well timers set hops ready . Hop spider ( hop bunny ) home made , well at work 304 stainless steel no less )
Boil goes well " No mess " from the Mrs .
In to the sink ice packs at the ready hose though the window to attach to my small and crude wort cooler ( home made at home this time )
Looks to be alot less liquid than I thought I may have left !
It cools to 23°C in around 40 mins . Had time to go to get some beer ( ghost ship & shipyard ) .
Have only got 9.5L L of left but at 20°C it was reading 1.060 , was aiming for 1.046 . Forward thinking I'd got 2×1.5L of bottled water ( and some spray mault light ( and some lme light ) .
Added 1.5L of bottled water and got 11L @ 1.050 ,
Give it a good stir and with a whisk ,,,, I know I know lots of oxygen . Pitched the yeast ..
Had my clean up and put everything away . 1st proper brew day over , just over four and a half hours start to sitting having a beer or two ( about 6 months reading about how to do it )
A bit unconventional some may say , but I have a better idea with the brewing kit I've got and what to aim for next week end lol
Just have to see how this turns out , by the smell I hope it ok .....

Sounds like it went well. I've got a bag of cararye and haven't used it yet. I think it's in Ghost Ship.

I'd have used half the yeast and rehydrated it at 37c. You can seal the packet with an iron and sling it in the freezer.

Well done good effort. I started brewing recently and just did my 4th BIAB yesterday, as usual a few things went awry but nothing major and fermenter bubbling like a good 'un today. I too spent lots of time reading and watching YT videos, a fun hobby for sure, keep us updated on the brew

I do like the ghost ship and shipyard style of beer , hope to be able to brew something along them lines eventually..
