Used S-04 for the first time this week in a best bitter. Impressed so far. Pitched on Thursday, rolling fermentation with a 1 inch krausen 24 hours later and nearly finished today. I was worried it was going to volcano but it didn't. Well behaved yeast. I'm tempted to start cold crashing it...

I pitched 2 packs of rehydrated Safale S-04 into an American IPA with an OG 0f 1070 and it looks like it has chewed it down to 1012 already. The fermenter started bubbling with an hour of the yeast been pitched!
