gluten free

Hi I am new to this website, returning to home brewing after 30+ years(my how things have changed!). The only twist is that I am brewing Gluten free and attempting to get to grips with Cornelius kegs, so will be asking loads of daft questions… please be patient with me 🫣

I’m planning on making an all grain batch of hoppy beer(an ipa of some sort) and adding Brewers Clarex to reduce the gluten so my friend can drink it. Any advice on this? What sort of brew/hops would be best suited? Any advice on how to best use Clarex.

Ive spotted this additive for making our homebrew gluten free (Clarity Ferm), but I'm wondering what it does to the taste? Anyone tried it? My family is full of those wanting to avoid gluten and good gf beer is hard to find!
