Okay, so Ive probably spelled that wrongly, but meh, you get the idea.

I want my next kit to be a weissbier, any recommendations for one to try? I've done almost every type now, and am getting a stash to be able to have a tasting session and decide where I want my brewing to go from here. It wont be to all grain until the wife actually decides where she wants to live (women!) but I reckon I have time for a couple more kits before we finally move house.

All opinions gratefully received.
 
I may get gunned down for this but I don't think I have ever seen a kit of this style (there probably is though) but I think these styles lend themselves more to being made down the AG route because of the fresh wheat, the adjuncts in the boil and very importantly the yeast they use(liquid yeast is probably the much better option)..

You could of course throw something together with extract I guess if you are willing to give that a try?
 
I'm getting that impression as well Rich, seems I may have to tap my cousins hubby to send me a 12 pack of his latest AG brew...
 
Not a kit but 3kg of muntons dried wheat extract , MJ's weissbeer yeast and 50g of tettnang.

Dissolve the dwe in 12 litres of water in the fv whilst boiling the tettnang in 2 litres of water for 20 mins. Strain and add to fv. take temp and add water to get to pitching temp top up to about 21/22 litres the last few litres may need boiling or chilling to make the pitching temp.

take og it will be around 1.050 add yeast sprinkled or re-hydrated yeast leave for 2 weeks. take a reading after 2 weeks if down to around 1.010 prime and package your beer using your preferred method.

takes 4-5 weeks from start to beer glass.

I'm not a huge fan of dried extracts, i'm concerned about the stability of the sugars when totally dried out...

Would this do the trick pops?

That'll make a very nice beer. Very similar to the first hefeweizen I made and it turned out excellent. Very quick to condition as well so you could be drinking it in a few weeks. I used the WB-06 yeast but I've liked all Mangrove Jack's yeasts I've tried.
 
+1 for extract. It's easy peasy, you just need a decent sized pot. And you can make a very good Weiss with extract as it's such a simple brew.

A word on weiss yeasts, they tend to throw up big krausens, like really big, erupt out of your fv and make a mess everywhere big. Not sure if the dried ones are as bad as the liquid but be warned.

A blow off tube or at least 50% headspace recommended. I left about a third headspace and regretted it.

yes although that will work out a bit weaker because of the water content of liquid vs dried extract. add 1 500g packet of dwe to make up that or brew a bit shorter
 
I went for 3kg of dried in the end. Figured you were the pro from Dover on this one. Just need a 50l FV now and I can make this this weekend...

mj's bavarian wheat is well behaved

I have 30 litre biowin plastic fv that will hold 22 litres safely although other better quality 30 litre fv's are available :-)

I just bottled my weiss - had to use simcoe cos I had nothing else available. fermented at 25 degrees for banana
 
DWE dissolved in 5L hot water (lumpy stuff that, took some serious stirring, this wort will be extremely well aerated) added the 1.5L that reamined from the boil of 20g Tettnanger for 25 mins and 10g Hallertau Hersbrucker for 10 mins and then made up to 23L with cold water, MJ20 pitched at 24 degrees.

Fingers crossed this krausen doesnt go too big. Will keep an eye on it JIC.

Smelled lovely, even if SWOGI (She who often gets ignored) complained that the house smelled like I was cooking hash cakes.

Washed down with my first bottle of Czech Pilsner by Better Brew, an absolutley superb pint which I cant imagine can get better but I'm sure it will...

I've bought the ingredients to remake this with an All Grain 5L minibrew for a side by side comparison... God this home brewing lark is addictive...

the MJ20 is safe - the krausen doesn't go nuts. i'm just about to try one of mine. hmmm... bubblegum(orange & banana). lush

A second week of carbonation and it will be fine. 1 finger of head from a high pour. so ready to drink 4 weeks from pitching. not bad at all.
