Forgot to take readings

Hey Up

I stupidly forgot to take any readings from my wine when I started making it so I have no idea what possible % I will have.

My freezer had broken & started to defrost, I only noticed it when I was halfway through brewing plum wine and then had to quickly use some blackcurrants in another barrel as they had gone to mush! So I had to stop and sort that out!

Anyway here goes
Both lots used Lalvin 71B-1122 (71B) Wine Yeast

Plum Wine
4KG Plums
2 KG Sugar
9 Liters of water

Blackcurrant Wine
4KG Blackcurrants
2 KG Sugar
9 Liters of water

Both barrels report a volume of 15 liters this i assume (I got my maths GCSE :P ) is due to the added volume fruit and sugar :P

Now how strong can I expect this to be? I want something with a bit of bite, atleast over 10%, if not how much sugar do I need to add to this?
 
Well these have been brewing alright, just need to know what i can expect ABV wise etc
Next time i will remember to take a reading even if my house is burning down or something xD
 
Without a reading or knowing exactly how much sugar there is in the DJ I don't think you will be able to work it out.
 
Well if we take out the fruit from the equation. I assume if I do it based on potential alcohol from sugar I get 10% min surly.

Is it worth pitching more sugar?

The yeast has a 14% tolerance
