Wychwood have re-vamped the old Black Wych - its now more of a 5% porter rather than the 4.5% dryish stout it used to be a few years ago. I like the change. I think its a lovely pint, and I would welcome other people's thoughts on it - particularly any insights into the recipe as I would love to brew a clone of this one.

Wychwood website says malts are pale, black, crystal and oats. Hops are Fuggles, Progress and Challenger. I've not tried it, but the balance of the black and crystal malts will be important. It looks more like an oatmeal stout from that list of ingredients, but the website says porter, so it may be more crystal than black malt. Which colour of crystal though? Possibly dark crystal, going by the tasting notes on Ratebeer.com. Black malt and dark crystal work well together. Here's a stab at a recipe:

23 Litres
OG 1050
IBUs 35

4.000 kg Pale Ale Malt (81.63%)
0.400 kg Flaked Oats (8.16%)
0.250 kg Black Malt (5.1%)
0.250 kg Crystal 120 Dark (5.1%)

25.0 g Progress Leaf (7.5% Alpha) @ 60 Minutes
20.0 g Challenger Leaf (9.3% Alpha) @ 30 Minutes

I think the type of crystal and the amounts of black and crystal malts are the critical factors. This recipe is purely a guess. You could get away with using one hop, either Progress, Challenger or Fuggles. A 60 minute addition is possibly all that's needed, I think 35 - 40 IBUs.

Thanks Clibit, I will give that recipe a go soon. I tried to get some details from their website, but between my laptop, the naff internet service I get here, and their fancy website I could never get the pages to load properly. I did email the wychwood brewery asking for some info on the grain bill and hop schedule but so far no response. Of course it is holiday season.

I will let you know how I get on.
