    Decent non-peaty whiskies.

    Scotland's best kept secret - anCnoc, from the Knockdhu distillery. You'll need to get it either online or from a local wine shop. The supermarkets don't have t because they don't make massive amounts, and they like it that way. Bottle will set you back 30-40 quid, but it's well worth it. j

    So I just kegged it and had half a bottle left over to sample. Out of all the weissen i've made in the last 20 years, this one is already sublime! God knows how i'll replicate it. J

    So, it had a frighteningly fast fermentation - barely three days. I tasted the hydro sample and, frankly it's beautiful. No sign of any scorching and it has lightened quite a bit. I'm a little confused but not going to lose any sleep over it :) J

    Exactly so. i can't really complain - I've been brewing for about twenty years and it's at least fifteen since I made a serious cockup, so I'm due one :) j

    As it happens, the colour is lightening already during the primary. I suspect the burned residue on the element is maybe settling proteins rather than the wort itself. having a hard time getting it clean, though. j

    Hi all, So i made a booboo. I'd just finished my boil (in an electrim bin with a heating element at the bottom) and had to dash out for an hour. yeah. I left the wort in the boiler. So, my resulting wort is several shades darker than it should be and the heating element has a nasty black...

    So far this year, i've produced: 5 gallons of ESB 5 gallons of christmas ale (to set aside) 5 gallons of Double IPA Another 5 of ESB Finally, 5 of summer lightning :) So, total is 1199! So close... :) John

    I have iBrewMaster (on the Mac) and it works very well - really helpful and friendly support too. It's great for keeping everything together and handy for seeing the colour changes that a change in the grainbill will result in. Also very good at automatically doing all those annoying...

    Small hole in lid of fermentation bucket

    No such thing as a beginner question :) Last thing you want is a magic-carpet for nasties to get into your brew. I'd get a new bin - for all the cost of it. Choobs
