    So today we had our first smooth, completely uneventful, catastrophe free brew day. This was all grain brew #4 for us. A single hop Amarillo pale out of the GH book. Hit the OG bob on at 1050 and just under a litre short in final volume in FV... feeling smug and finally happy with our set up...

    Our first ever AG brew. Maris otter with EKG and challenger. Came out at 5.2% Tastes great! Very happy. Hoping it gets better over the next few weeks.

    Interestingly it’s gone from 1024 to just a fraction below 1020. It’s now at 23 degrees and it tastes nice but now a bit effervescent and full of tiny bubbles... fingers crossed. Already done the yeast calculation for our next brew though! athumb..

    I had already had the same concerns about bottling this beer. Our last batch was perfectly carbonated and we’re committed to bottling this batch rather than doing anything else with it. We will try some rehydrated dried yeast on Wed if there’s been no change....

    So how much S 05? Enough for the whole volume? Do I literally rehydrate it as per instructions (10 x weight sterile water) and lobb it in and stir gently... or do I need to make up a starter with it using DME and yeast nutrient? Please bear with me... this was only our second AG brew...

    Thanks that’s all very helpful. I think i’m just going to mash the full volume (the other appeal of this technique was not having a hot liquor tank etc) and see what efficiency I get first time round. Would anyone suggest mashing for say 90 mins instead of 60 to improve efficiency?

    We brewed Greg Hughes American IPA on Sun. All went well. Pitched the yeast at 8pm at 20 deg. It was whitelabs wlp060 American ale as per the recipe. Didn’t use a starter but had it out of the fridge for 6 hours prior to pitching as per instructions. We left it at 20-21 and it was a little slow...
