Hop basket or bag, which to use?

I just chuck the hops straight into the kettle during the boil or straight into the FV if dry hopping.

    'Fast' larger method

Yes. I used this method to make a Schwarzbier. I didn't follow it exactly. Grainfather Electric Grain Mill

The main reason I moved from buying crushed grain is that I suffered a lot of stuck mashes on my system that I eventually traced to grain crush size. By crushing my own grain I have eliminated them. I suppose as well that by crushing grain on a brew day, your grain is fresher - although I...

    Hops pellet or flowers/cones

I use pellets and just chuck em in the kettle or FV as necessary. I stopped using cones a few years back now.

    Grainfather Electric Grain Mill

I love my GF grain mill. Yes the hopper is small, but I have never found that to be an issue. It holds about 1 Kg grain which is fine for me. My grain bills are generally 4-6 Kg.

    Using older grain

Taste it - if it tastes alright then brew with it. If it doesn't then bin it

    Advice on modding a fridge/freezer

Yep. I use the drain hole to run the Inkbird temperature probe and the power to a tube heater into my fermentation fridge. No mods needed at all.
