    It will be fine to mix dried yeast I would think. It's probably all Nottingham yeast anyway.

    Question about filtration

    Brew dog filter their beer with a 5 micron filter. I would assume filtration at this pore size may well leave sufficient yeast in the beer to bottle condition. I will perhaps be tempted to try this on my next batch.

    Well the starch needs to be fully converted during the mash, if you have significant quantities in your wort/beer I don't think there is much you can do about it as far as I'm aware.

    I have never all grain brewed but could the problem be a starch conversion issue in the mash? That's to say you are extracting well from the grain but not all of the extracted material has converted to fermentable sugar. This would explain why your OG seems good but your yeast stops prematurely...

    Why not taste a small sample? I would expect off flavours due to infection to dominate if they are indeed there.

    Yes, it is a Belgian Quadrupel, what you have said confirms some of my thinking i.e. the best ingredient for the this beer will be time and patience! Will report back periodically.

    My understanding is that Gelatin only works in-combination with a cold crash... I don't have the capability to refrigerate my beer unfortunately so are there any other approaches which may improve beer clarity?
