    bulldog easter brew

Just bottled this today. Decided to bottle prime rather than batch prime and think I may have over primed. If I'd batch primed I'd have gone for 70g. I did 20 bottles at 5g per bottle and then the rest at 2.5g per bottle. Are the first lot going to be over carbed for this style?

    Novice - flat beer

96g for a 12l batch seems plenty. I put 140g into a 20l ruby ale and it was well carbed. Everything you did compares with what I've done so I can't see why you wouldn't get a nice carb from that. Unless your yeast was exhausted and was insufficient to carb the beer but that sounds like a rare...

    Novice - flat beer

So you transferred to a secondary FV and then batch primed and bottled immediately? How much sugar did you use? A couple of things I can think may have happened: 1. Not enough sugar in batch priming; 2. Sugar not mixed enough in secondary so some bottles received less sugar than others...

    bottling process?

I wouldn't add any sugar to the bag directly. It will carb in the bag and probably stir up the sediment when you open it for bottling which as you suggest will release most of the carbonation anyway. Leaving it a week after fermentation is complete will allow it to settle and clear some. If you...

    De-gassing lager.....

I'm pretty much a newbie so don't take this as a definitive response but I would expect your lager to be quite flat at the end of fermentation. Added to that you will presumably want your lager to be well carbonated before drinking. So with this in mind I don't see why you would want to de-gas...

    Lager experiment well under way

Great post! Interesting to hear what you say about your Lager. I bottled a coopers Australian Lager 2 weeks ago and the taster I took was disgusting. Tasted chemically, possibly sulphurous. Was my first ever brew and I thought I'd ruined it. You've given me hope it might yet come good. Will...

St Peters Ruby Red Ale review

If I'm fermenting this at 18C should I give it a diacetyl rest at say 22 for a few days once fermentation is complete? I plan on crashing it to 2 or 3C for a week once complete before bottling but just wondering if the rest would help clean it up.

St Peters Ruby Red Ale review

Just put this on Wednesday. My second ever brew. Got it sat in the fermentation fridge at a steady 18C. Checked it yesterday and its already put a large bow in the FV lid, even though I have an airlock in. Going much more strongly than the lager I did first time round. The wait is killing me...

    Cooper's Australian kit

As an update on this. I initially raised the temperature to 20c for 2 days which didn't seem to make much difference. I finally raised it to 22c and managed to get the hydrometer down to 1008. After calibrating my hydrometer at 1002 that gave me a fg of 1006. Still has such a chemical taste...

    Hello from North London

Thanks for the advice Slid. I gave it a gentle stir yesterday to see if that would get it going but this morning there was no noticeable change. I'm slowly raising the temperature up to 20 to see if that helps. Calibrated my hydrometer while I was waiting and it calibrated at 1002 at 20c so...

    Cooper's Australian kit

Hi all. My first brewing attempt is currently under way using the above kit. Been in the fv for 2 weeks but my first gravity check has come in at 1016. I'm brewing at a consistent 18 degrees which is at the low end of the operating temperature for the supplied ale yeast. Should I up the...

    Hello from North London

Hi everyone. New brewer alert! Moved house end of last year and inherited a fridge and freezer in my garage. Was about to dump them when someone suggested I could use them for brewing so that's what I've done. First attempt has been a coopers Australian Lager which has been in the fv for 2...
