    That looks very high, mine sits just above the element. Your boiler looks slightly taller and thinner (maybe it's just the photo?), try pushing it down as far as it will go, there shouldn't be much of a gap. The false bottom is the same as mine. It's a snug fit and doesn't twist.

    Yes, fits great. It pushes in tight, that's why there's a little tab remove it again. Give it another go, you probably just had it set in incorrect, it amazed me the amount of trub it gathered. I've had another brain wave for the sparging stage which I'll detail in my next brew.

    I own a chiller but I overnight chilled my last brew and it turned out great. Unless you want a specific taste profile I'll be doing this from now on. It shaves a bit of time off but also lets the trub settle better for transferring to your FV.

    No but I know water hardens the further North of the British Isle you go. I know we have different water, more akin to Scotland than Southern Ireland and England. I have a TDS of around 10 which is pretty neutral but I've never checked the actual composite of the water.

    Yes and it works great. You can also sour it by adding lactic acid but that seems a lot of hard work for the same results. If you wanted to brew a true Guinness then you'd have to change the water profile but KISS! That recipe I gave works brilliant with Belfast water ;)

    Yes but don't worry too much, the beer will be OK if a little weak. Plug some numbers into here, the beer should end roughly 1.010 so that will work out around 3.2%. If it drops lower then the ABV will rise.
