    They are waterproof and should be fine (at least my 308 probe is) but you can always use a bag if you want to be double safe

    Force carbing in king keg

    I might be wrong (not a kegger) but I think carbing with C02 at 8PSI would take as long, if not longer than carbing with priming sugar? Most force carbers in cornys seem to do it at 30+ PSI to get in done in a day or two.

    Fruity beer advice

    IIRC, brewdog recommend using just the grapefruit peel (making sure to avoid as much of the white pith as possible as it adds potentially unpleasant bitterness). I think I would add it in the fermentor like a dry hop as you want to keep as much of the aromatic/perfumed compounds as possible.

    What to brew with Cherry

    A completely different use for cherries but Jamil Zainasheff's Black Forest Stout is on my list to brew at some point, got fairly good reviews and is supposed to be quite balanced (i.e not too sweet or OTT chocolately). Might be one to consider for your next harvest:cheers7:
