    I've used heat shrink caps on mine and they do look nice, but I just hate buying the things. I've also used old foil caps but they seemed fiddly, bits get stuck but I can at least recycle them.     It's all to do with oxidation. A dunk through lemon juice works for small quantities, but if you are using a pulper you could use CO2 or argon ? What effect would keeping the apples under water have? - Works for potatoes.

    Interesting article. Basically using rooibos (redbush) tea and wood in standard wines. They are patenting the process....but doesn't affect us homebrewers! Seems it may skip the step of adding sulphites for those who are allergic to them. Clicky linky ;)

    How good is a Woodforde Wherry?

    I brewed this kit and it was quite good young. Better after about 6 weeks. But as a kit I've had better kits. there is nothing wrong with it, just I think there are better out there. I actually prefer the "Simply bitter" kits to this one.

    pulping apples

    I've seen a waste disposal unit used as a pulper. Seems to work very well when piped with a side exit into a brew bucket. Used with a pusher it can cope with whole apples. Have a look on youtube. Seems the most compact and easiest to clean.

    Apple and Elderflower cordial wine

    Just bottled a second batch of this, with less sugar and the toasted oak chips during the first fermentation stage. Looking promising and easily drinkable now. Cleared very well by itself with the bentonite in there.
