    No profile, just a shot in the dark TBH. My dark beers are good, typical for London water and the initial taste with the Gypsum is excellent ....... then theres the Gypsum aftertaste.

    When I first started 1.012 (from 1.040) was Ok but was not all it should be. You wont get bottle bombs, you might get a really nice beer! but nowadays I'd be looking for 1.008 - 1.006 from an OG of 1.040

    I did try a teaspoon (about 4 grams) initially but even lowering to about 1/2 a spoon, about 2 grams, i can still taste it! Thats in the mash on a 23L brew

    My light beers really improve when I add Gypsum. Apart from the fact I can taste it! I get more malt flavour, more hop flavour and this terrible dryness / gypsum taste. Guess the answer is don't use Gypsum ....unless you know different?

    I've had an infection. Only 1 in 93 brews but I knew the moment i open the shed door. No need to even take the lid off. No idea how it happened though.

    When tea was made with a teapot and loose leaves there was a whole ritual to the 'Brewing' process and probably some craft involved but nowadays, when we just drop a teabag in a cup, does anyone call that brewing? I think not.

    Airlock or not?

    Yeah, blimey. 9 years old and still kickin ! Anyway, I sometimes wish I'd used a blow off tube (some yeast goes mad at the start) but normally the airlock is fine and I do kinda like the bloop bloop sounds :)

    You might get bottle bombs or at best you'll get 'gushers'. Early on I had a few gushers, they were almost impossible to drink and that was because I was only going down to 1,012 where I should have been down to about 1,008. Nowadays I've improved and expect (depending on yeast etc) 1006

    I've just noticed the small brewery near me (Orbit Brewery) lists 'Oats' as one of it's ingredients ......... and that's in a American style Pale Ale !!

    I'm glad this came up. I did several brews with Oats and I should do some again. Some of my best early brews had oats, I got great results roasting them too!     I use these. Add a weight, steam in a pan, then add hops.
