    What are you drinking tonight 2024.

    Tonight is a first taste of my latest brew. A golden ale with archer, jester & olicana hops. Part of my move to all English hops. Still a little undrcarbed & a tad cloudy though.

    Final clarity will be interesting (if there is a difference by that point). CML have flocculation as 'high' for Five, 'good' for PIA & 'medium' for Clipper.

    You can reduce the base malt a bit then mash warmer - say 70c & use a less attenuative yeast eg MJ M15 or S-33 It's all a bit of a balancing act though.

    Kirkstall Brewery Drop Hammer is a 10% Bourbon barrel aged stout & about £8 a can. It's rather tasty too 😀

    Country House Brewing

    Not a book you can now walk into Waterstones & buy but I've recently aquired this & it's a fascinating read. Comparing old methods & practices with modern ones is quite startling (if not totally unexpected).

    Wasted Hops Target

    Dark Rock has become my supplier of choice (since my LHBS shut) & they supply in multiples of 10g (up to 100g) though if you order less than about 50g they do work out a bit more expensive.

    Induction Hob

    I have a portable (Buffalo) 3kW induction hob. Used with a 32L (8 US gallon) pot filled to 7g. Works well enough for me. You do need to ensure your pot is compatible with induction.

    Bouncer beer filter help?

    You want the finest filter possible imho. I wrap a small piece of old hop bag around the red filter & fold over before screwing on the top. Works OK with gravity feed from fermenter to bottling bucket.

    What did you brew today?

    Today I'm doing the first of my two Christmas beers. It's a Belgian style table beer. Predicted to be a massive 2.1%abv. Just a half sized batch (12L). Vienna, Munich, CaraRed & Caramunich malt with Mittelfrueh hops.

    Thanks all. My LHBS doesn't stock Pilgrim but "them" using Pilgrim would give me reason to NOT do that wink... I think this will have to be the one exception & continue to use some Saaz later in the boil.
