    now I remember.. I added potassium metabisulphite 4 days ago.. and the kieselsol.. DOH. I think this stage (2nd helping of kieselsol) is maybe for reds that require more clearing. sorry fellas.

    same here for the under stairs cupboard, i did consider it but it's full of all that stuff. my entire kitchen is pretty cool.. has a tiled floor and inadequate heating after I calculated the BTU requirement for our extension.. I blame those stupid designer radiators and not my math though.

    none in glass bottles, all in asda 5l water bottles. I'll move it into my booze cupboard in the kitchen, that's the coolest room in the house. I may have to - A, drink more wine and B, scale back production so I don't have a such a glut of product.

    so i have gone a bit crazy with the wow.. i did a demijohn of wow, then 23l, then a CC zinf kit, now another 23l wow. so i have a glut of product. I am keeping 5l in a box in the fridge and the rest in 5l water bottles. trouble is I have them in my garage.. and on a top shelf no less...

    yes it's only very slight. I wondered if it had started to ferment again after I added the apple juice to sweeten it. If it builds then I'll rack it again.

    I filled 3 x 5l water bottles and 1 x 5l bag in box a few days ago with the WOW rose recipe. It had been racked twice. In the bottom of 2 of the 3 x 5l water bottles there is a slight amount of sediment... very slight, like a tiny dusting. Is it ok to leave? or should i rack it off this to...

    yes, totally depends on your taste... I stop fermentation around .995 to .992 and add 250ml of apple juice per demijohn (as per chippy_tea advice) as my wife likes the rose medium.. I don't think there tends to be a right or wrong answer.. just depends on taste.

    I'm on the lookout for a good 30 bottle red kit.. I'm no wine expert but I know what I like.. I like a full bodied rioja or malbec, I don't like too much acidity. I will be letting it age as I dont drink that much red... shame there aren't port kits as I love a nice port.

    If you stick to the recipe and keep to temp it's at .995 or less in a week.. mine was at .992 in 7 days. 48 hours to clear and it's drinkable and bloody lovely - and so cheap.

    its in a pet carboy now.. cant see through to the other side... i've decanted a bottles worth today and it's about as clear as last time i left it 24 hours.. a slight haze to it. ill give it another 24 hours. after that i reckon it would need a filter to polish it if i was bothered.. which im not.

    that's what I thought but there was a good old layer of sediment on the bottom even though I was careful racking the 1st time and did have a good layer of sediment and red grit? in the 1st FV
