    What volume did you boil the extract at? The risk to this approach is that you darken the wort and drive off hop aroma.

    6 pack of saison DuPont is £15 from Amazon (free delivery if you have a Prime account). A bit more pricey per bottle than buying from a specialist seller but most of those will charge delivery on such a small order.

    Hitachino. I think ‘nest’ is just part of the brand name. The most common ‘nest’ is a white ale. There is a separate ‘nest saison de Japon’ which is the saison.

    I’ve tried it. I didn’t like it much. The ginger gave a weird metallic flavour. Not really a good example of a saison if you’ve not tried one before. Saison DuPont is a classic of the genre.

    No need to worry about designing your own brew or converting all gains recipes... yet. There are loads of extract homebrew recipes on the net and some of the books contain extract versions of all-grain recipes. If you want to play around with recipes, I find Brewer’s Friend Recipe Builder excellent.

    This probably isn’t possible, but could it be an infection in the bag of lactose? That would explain why each lactose beer gets infected, but why subsequent brews don’t (you clean the equipment afterwards).
