    forgive my continued newbie questions - but this forum is giving me an outlet for things I have pondered for sometime. I make small batch beer using a 1 or 2 Gallon Set-up ... the yeast I buy is suitable to make 5 gallons - am I therefore ok to halve each packet? If so, how is this best stored?

    I get the importance of Hydrometers and testing beer at key stages - but if I am brewing small 1 Gallon batches in a demijohn- how do I test without wasting my precious commodity? If I sterilise - am I ok testing in the DJ directly?

    Thanks all - really helpful to get a knowledgeable steer on this. Got so use to using old wine demijohns (have about 8 on the go at any one time), I know the process well now, so this feels like starting from scratch again.
