    Kicked off a rhubarb saison yesterday - the recipe stated fermenting at 21 deg, however the yeast stated ideal fermentation temp was 26 deg upwards? Which do I pick??

    I fear I may be asking my learned brewers a foolish question - but if I use finings to clear my beer, will there be sufficient residual yeast to carbonate when bottling
