Hi, Do to some admin nightmares my bottles have been delayed and now not going to be delivered until Monday. The beer has been in primary for 13 days with a big dry hop at 6 days. I'd normally like to bottle on day 10 as I find I end up with a grassy hop character if the beers on the hops...

Brewing a 5 gallon batch of my single hop Simcoe IPA. Underestimated my efficiency. Was shooting for a FG of 1062. Pre boil gravity was 1064! Gonna be a big beer. Might dilute but unsure at the moment. Looks good though with no hitches... no doubt something terrible is going to happen...

Indeed! Going to speak to environmental health re waste process but definitely need to set up waste contract. I don't think it'll be that expensive for the volumes I'm dealing with. Due diligence is something I'll need to look into but its something I can get help with. I have 1 couple...
