    The 2 week schedule is a good starting point, the best thing you can do is measure the gravity after the 2 week fermenting to see if low enough and that way you know if to leave it longer or not. Same with the carbonating, if you’ve got a bottle that’s gas fizzy pop in it then wash and sterilise...

    No I would use the first. Being as you’ve got another brew on I wouldn’t worry but i batch prime as I find it easier to control which is what I suggested you use your second for. I mix the sugar for carbonating with some hot water and siphon on to it so it mixes then bottle/barrel/etc from there.

    Personally I would dry hop once fermentation is finished in the first and rack in to second to batch prime before putting in whatever you are putting it in to serve. Edit: invest in an auto-siphon. Reduces risk of infection and it’s easier.

    Thanks for that. I’ve got most of the recipes you have put up to try so looking forward to them all! So if one of the recipes says “No 1 invert” or “No 2 invert” I can put the percentages of sugar in instead?

    I’m reasonably new to AG recipes so please bare with me. My old man always talked about the “old recipe beers” so was going to try as many as possible in his memory. The sub for the invert sugar above, would it need to different quantities for the different types/brewers number of invert sugar?

    Alone if my brother isn’t around. Although now I’ve moved I can do it on the patio whilst daughter plays on garden so might be a with whoever’s about now. I’m quite relaxed about stuff like this so I’m not bothered either way.

    It depends on the other contents of the smack pack, if the sugar content is high enough it protects the yeast from rupturing. It’s not going to cause any damage if you defrost it and see what happens in a starter. If it goes then great, if not you haven’t lost anything. The beer will be ok...

    I have been buying 2 of each with the intention of laying one down and drinking it after 7 years. This year I’m going to buy another 2017 and 4 2018 so I can drink one on arrival, after one year and then after 7.

    If you’re going to do it I would pick plenty and make it from the fresh leaves. They’re slightly more ‘floral’ in flavour and the aroma is slightly misleading for final taste. I’ve only had the leaf tea (dried and fresh) and drying took away some of the floral flavours.
