What happens when mash pH is too low?

I went with steeping the dark grains separately and adding at the end of the mash. OG was 1.069, and FG (3 weeks later) is 1.021. Low attenuation strikes again. I've roused the yeast and increased the temp, but it didn't budge . Assuming there is no fermentation left in this, should I...

    Have I done anything stupid?

A lot of emphasis is placed on keeping exposure to air as low as possible. Does any oxidation that occurs have an effect on flavour or is it just the appearance that suffers?

    The white poppy. [poll]

Are the purple poppies in remembrance of the animals (horses I presume) who were killed in war? If so, I can't see a problem with them.

    How to make a NEIPA

Thanks for the replies. I have 2 x 5ltr mini kegs, so I would use those for most of the brew. Are hops added to the fermenter in hop bags? I normally add them loose then lose them during crash cooling. With these levels of hops and the advice to not crash cool, adding them in bags seems the...

    How to make a NEIPA

I'm planning to brew my first NEIPA shortly, but I can't find solid, consistent advice on line. I know oxidisation is a problem, but can anyone tell me any other dos and don'ts? What yeasts are best, hops, specialty grains? If anyone has a good recipe that'd be much appreciated. athumb..

    James Morton - Brew

Glad you got it sorted. Learning Beersmith is more difficult than learning to brew

    James Morton - Brew

I scaled that recipe but still got the 48 IBUs. Are your aroma steep or dry hop registering as adding any IBUs?

    What are you drinking tonight.

Last night I tried two commercial NEIPAs. Thornbridge Green Mountain - more bitter and less juicy than I expected. Not a bad beer, but a poor NEIPA. Brewdog Cybernaught - specifically sold as a sessionable NEIPA, and it shows. A little underwhelming if you're after a proper NEIPA, but it...

    Man size.

I really object to the term 'menopause' as it implies men are responsible for the ending of a woman's ability to procreate. Like we did it to them. It should be renamed 'womenopause'. Don't get me started on menstruation.

    Totally Tropical Pale

I'd keep some of the sugar in. It helps with attenuation. Maybe reduce by a half, or two thirds. And stretching it to 23ltr, possibly more, will be fine I think.

What happens when mash pH is too low?

Cheers guys. Food for thought. I'll give the steeping a go. I didn't add any water treatment to my last stout, as it was a last ditch effort to brew one using un-altered tap water. Its something I've looked into since so I'll look at water treatment for my next stout. And tonight I'll...

What happens when mash pH is too low?

That's where my knowledge of water treatment falls. I'm sure I read on here that the total alkalinity is what I should be paying attention to, rather than my water's pH. Last year my water's pH was 7.68. retested this summer and it's 8.24. total alkalinity was 7ppm (CaCO3) in both years...

What happens when mash pH is too low?

Would I just use the same amount of dark grains as per recipe if I did this? Or are there adjustments required?

    Storm Callum.

It was pretty bad in Ayrshire too. Several times a gust of wind caused our letter box to open and close again, making us think someone was at the door. Unable to take any more, I taped the letter box down with insulation tape. It has worked. For now. F### you Callum.

What happens when mash pH is too low?

I live in a very soft water area, and my IPAs and similar pale beers usually turn out as expected. Amber beers too. My dark beers however are never anything special and I'm wondering if with all the dark grains, my mash pH gets too low. I struggle to hit FG with dark beers and they usually...
