    which hops should I use

    I would also go Amarillo and Citra - 50g of both together will work well. The columbus is ideal as a bittering hop. Should be in the range of 14%Alpha Acid. I would use that as a 60 minute bittering hop in the boil for your next brew or 2.

    an old fashioned glass ashtray (£1 from charity shop) placed under the tap works well for me - mine are top tap kegs so ashtray goes on the benchtop (not down on the floor).

    I love the idea of saving money, although to be fair if we add in all the kit and 'incidental' costs I suspect there isn't much of a saving in reality by brewing our own ! For me its all about brewing great beer, the strength and flavour I like and the creativeness of tweaking/making recipes...

    Shorter as its an ale yeast, althought I haven't useds a dry kolsch yeast. It should be 2 weeks ferment, then bottle and carb up somewhere warm for 2 weeks, then 2 weeks cold conditioning before drinking - will definately benefit from another 2 weeks cold condition to crisp up and mature a bit...

    Brewing this today, just doing the 30 mins flamout steep now - smells divine !!! Inspired by the Totally Tropical Pale Ale recipe but adjusted to dial the ABV down to 4.8% and up the bitterness to 43 IBU's - also used Centennial instead of Citra as had that to hand in my stocks. Anyway, here...

    Will do, I will post my adjusted recipe - aiming for 5% ABV, and using San Diego Superyeast (which is a Chico strain yeast like WLP001 California Ale yeast or safale US05)

    You do need to 'warm' the thermopot through before mashing in to avoid losing temp during the mash. I do the following after a bit of trial and error: 1. pop the water for mashing into the thermopot (water at 80°C) 2. leave for 15-20 minutes - water temp in the pot drops to 72°C as the pot...

    Came across Kolsch on posts on here and I now use the WLP029 Kolsch which is expensive to buy (like all liquid yeast) but can be top cropped (harvested) from one brew and stored in the fridge and re-used in future brews, up to 8 times or so is ok I think...
