Good advice thanks. The 50 ltr system is an attractive one as I want to brew two full kegs at a time with room to spare. A 40 ltr system seems like it hasn't enough margin.

I took the plunge and bought a Paulaner 0.0% to try.
It didn't tast like a weissbier at all which was disappointing although colour and head were good.
Taste was strongly malty, almost ovalteen like especially in the aftertaste.

Thanks to all for the advice. I think I will try to brew a weissbier with leaf hops to minimise hop particles and add 1/4 protofloc tablet to the boil to take out some of the crud.
I berw from grain and in three vessels. I use SS brewtech fermenters and fill kegs from the fermenter via a bounce filter to catch hop debris ect using good and fashioned gravity.
My wort is always cloudy, the bounce filter is only good enough to catch the bigger bits and has no clarification...
Tried that with no real success.
I have thought of using leaf hops instead of pellets to reduce the fine debris in the brew as I find that pellets break up.
My next brew is to be a Weissbier so maybe I will do this and see where it gets me.
I have one of these things and I don't use it. Leaf hops tend to float and I found keeping the top of the basket above the fermenting brew was almost impossible while keeping the fermemtor airtight. As a result the hops floated out. A wast of time.
