    I was always under the impression that hops weren't a concern, due to their natural antiseptic properties. Just be careful when you open it that you don't drop anything grotty in it!

    Never tried using extract or making the ginger beer, but I would say DON'T USE WINE YEAST WITH MALT! Wine yeast strains prefer fructose over maltose and produce flavours that are much better suited to wines than beers.
