I've moved to smaller (~10l) batches, and bottle one batch while the next is brewing. Plenty of time during the mash and boil, and you can keep an eye on it while you're bottling. Saves water as well, I can use the cleaning & rinsing water to clean up the brew too. Vive le bottle!

I've brewed with Belle Saison a few times, nearly always at 25C throughout to make sure I get the characteristic esters - in fact I have one on at the moment at just that temperature. It always ferments out to over 90% attenuation. I love it!

Brewuk sometimes have the Anvil 4 gallon (US) brew bucket for sale. The only other similar one I've seen is the similar sized Fermtank from Delta brewing, but they don't ship outside the US :-(

Great stuff! I'm a great fan of Belgian style yeast, I've also used the Lallemand Belle Saison to similar effect. Fermenting higher than normal (25C+) gets lots of characteristic esters, and it ferments out very dry (90+ % attenuation).

One thing not to worry about is the colour. I've had some very brown juice yield some delightfully clear and pale cider. The answer is usually just patience and wait for it to clear naturally, then siphon carefully. Or use finings if you have to and are impatient!
