Should I add tannin / tea?

I've been reading and reading and can't get a definitive answer in regards to adding black tea to cider. I'm about the move my cider in to secondary, where I ill be adding peach. Should I add some tannins in the form of black tea?

Turning excess cider in to vinegar

When racking my cider in the secondary, I am going to have perhaps 2 pints of excess apple cider. I was thinking of attempting to make some apple cider vinegar? Could anyone give me a quick run-down? I've tried googling it, but I can't find any resources that answer all my questions. If it...

Hard pink lemonade recipe - Help?

Yes, the plan is to back-sweeten with erythritol, however I've a dilemma now. I'm thinking I want to perhaps back-sweeten with pure raspberry juice, to help really give it some stronger raspberry flavours and looks, however this would require me to kill off the yeast, making me unable to bottle...

Hard pink lemonade recipe - Help?

Thanks but no thanks; lemon and raspberry it is, and that's non-negotiable, haha! And okay, thank you.

Question regarding leaving brew in primary longer than is necessary. Also, question regarding bottles & caps.

Thanks mate. I have a load of 20 and 35Cl gin bottles, all empty. If I purchased some appropriate caps would these do the job? Would a new fresh cap with intact seal be good enough for storing carbonated drink?

Hard pink lemonade recipe - Help?

So I'm planning on putting on a gallon of hard lemonade sometime this week. I've found some recipes which look good which I will be working off. However, I would quite like to try a hard PINK lemonade, as I absolutely love it in its non-alcoholic form. The recipe for the hard lemonade (No pink)...

Question regarding leaving brew in primary longer than is necessary. Also, question regarding bottles & caps.

I have a gallon of apple juice brewing. It will soon (By the look of the bubbling, I'mt thinking 2 days) be ready for racking in to the secondary vessel, where peach puree will be added for an end result of apple & peach cider. I have ordered an auto-syphon though I do not think that will be...

Aging - Apple wine - How and how long?

That Kvass sounds interesting, I'll look in to it :) I've used Nottingham ale yeast myself as that's what I was advised to use if I wanted to maintain as much of the fruit flavours as possible. My brew is a simple one - Merely 5 litre of cloudy pressed apple juice from the carton (Not from...

Aging - Apple wine - How and how long?

Thanks Phillic. With aging, should I expect the original fruit flavours to make a return, and for that typical strong "cider" smell to subside somewhat or mellow out? What effects should I be expecting on the taste? I was told to expect this to come out at around 12% ABC, roughly. What's so...

Syphon and filtering kit - Help?

Morning guys. I'm looking to buy the syphoning equipment I need to rack my demijohn in to secondary and also to bottle in when ready. I want to get an auto-syphon, and would like one with an in-built filter / sediment trap. Is this what I'm looking for? If not, could you point me to something...

Aging - Apple wine - How and how long?

Is bentonite just a type of fining? Thanks for all the help mate, it's much appreciated.

Aging - Apple wine - How and how long?

Aye I'm afraid I was unaware of this and have already started my brew! Is there anything I can do post-fermentation or during?

Aging - Apple wine - How and how long?

So, use bentonite AND pectin enzyme or just bentonite? Do you think this would taste good carbonated? I was planning on carbonating it from the start, but not sure if something with an ABV of 10-ish percent would you okay, what do you think? Hahaha, 1 month is still better than many folks I'm sure!

Aging - Apple wine - How and how long?

Afternoon guys, hope all's well and you're all keeping safe. So, my apple cider is coming along nicely, bubbling consistently and looking good. Turns out I added too much sugar and I've been told that, chances are, my apple cider should ferment to about 12 / 13% ABV. I will then be racking in...
