Hey Patch, Thanks for your speedy response, that's very helpful. So the level of carbonation I'd imagine is directly linked to how many days you keep your brew under high pressure co2/nitrogen? I'd be as we'll to leave it 24hrs, purge the keg and drop pressure to around 6 psi and give it a test?
