    I've actually never had a problem with clumping providing there's a constant stir while adding the DME. LME, on the other hand, can really screw-up the bottom of the pan if not added rather slowly.

    I've always added the dissolved sugar to the secondary fermenter with a gentle stir. Never had issues in 11+ yrs. Most recent home-change (new water supply) has been the cause for all my over-carbed issues in my current batch being consumed.
