    I got a very similar flavour to Hersbrucker using Voss Kveik to ferment a Pilsner. I used Mittelfruh and fermented at 21 deg. It was quite tart to begin with but mellowed out to give a nice lemon character.

    Haha yeah I’ll give it a go and let you know! plan is to pressurise fermenter after cold crashing to match the keg pressure then use gravity for the transfer. Will vent the keg slightly to get the siphon going then link the gas ports to equalise the pressure.

    It will be carbonated as I’m fermenting in a fermzilla under pressure, just slightly less carbonation than the keg. Do t see why a closed transfer wouldn’t work, guess that’s what I’m checking to see if anybody else has done it

I can brew about 25l on my kit, I normally fill a keg and bottle the rest but I’ve brewed the same recipe twice and was thinking of just putting the extra in to the half empty keg with the same beer.     yeah there would be a point where the valve chokes and back pressure increases but I can open it up and the pressure drops so don't think it's that. Maybe I backed it out a bit more than I thought when setting it, it seems to be sticking at 15 now so will see what happens when it stops...

    It’s the first time I’ve used it so unlikely but will have a look once the fermentation has calmed down. Thanks for coming back anyway, at least I know that’s not normal. I’ve dropped the pressure back down to 15psi so will see if it stays there.

    Looks great What sort of head retention do you get with these type of beers? I’ve brewed a couple of helles with same malt and yeast and seem to get poor head retention. Not sure if it’s down to the ingredients or something in the process.

    remembered I did bump the temperature a bit higher on this one to around 23, was concerned it wasn't going to attenuate enough but it got there in the end. Not sure if the higher temperature helped, probably just needed leaving alone!

    No I just chill it down, I do purge the keg but that’s about it. Haven’t noticed any oxidisation problems. Would definitely brew it again at some point although I’m going to try one of the liquid yeast strains next
