    Great! Unfortunately I don't have the space for a separate stove but I do have a gas oven so that might be an option, I just find electric more predictable, especially if I can plug it into my inkbird (which I didn't mention I had so you wouldn't have known).

    So to save costs I'm going for a DIY mash and boil kettle so I can have something to brew with now rather than wait who knows to save up. My question is, if I'm filling a 10L pressure barrel, and using a 15L FV to brew in and fill from, would a 19L ss pot suffice to turn into an electric kettle...

    For a short while due to being on meters, I think gas was more expensive. What I'm planning on getting is a mash and boil kettle. I previously owned the 35L Brewzilla with it's 1400kW total power use so we can handle it.

    The one I have in mind is in fact a Malt Miller one, I have it in my basket along with a new bag and ingredients! I pretty much buy everything from you guys if I can haha, but I am looking at the 25L one rather than 35L due to my budget, and it will do what I need.

    I'm trying to get down to 1.005 or thereabouts, and only an abv of just above 4% (4.2% to be precise but I know in reality it's difficult to control for such specific levels).     Whilst technically viable, it's high risk on the basis that there is no way of knowing how any two yeasts will interact unless someone has already done exactly the same brew, malts hops and all.

    I did actually consider WLP023 but as it lacks the saison character and high attenuation, I would need to blend which is not something I'm looking to experiment with here, as I have no idea what might dominate and it could be expensive for someone just above minimum wage as an apprentice...
